Charles Austin and his employee James Savage came to Hornsby in 1897 when they established the Hornsby Butchering Co. between the Waitara Foundling Home and the hotel now called 'Blue Gum'. Austin purchased land between William Street and Dural Lane and built a butcher shop. James Savage managed this shop for many years until he decided to branch out for himself and opened a shop on the opposite side of Peats Ferry Road.
