In 1897 Charles Austin travelled by sulky with James Savage from Glebe to Hornsby Junction and established their business between the Waitara Foundling Home and what is now the Blue Gum Hotel on the Pacific Highway, Waitara. It was not until 1902 that Austin purchased land on which the shop with ‘Hornsby Butchering Company Estab 1897’ was inscribed on the parapet. Charles purchased an acre of land between William Street and Dural Lane for £10. He then built a small butcher’s shop which had gum tree branches hanging at the front to keep out the flies. A smaller room was built at the rear where the meat was cut and sausages made. Austin later appointed James (referred to as Jim) Savage to manage the business. There were very few shop customers in those days so meat was delivered to homes in what were called ‘Cutting Carts’ of which there were eight. These carts were custom made and stocked with uncut meat. Residents purchased their joints, chops and fillets which were cut on the spot. Steak was sold for fourpence a pound in weight.
